Coconut sugar is made from the sap of coconut palm trees. The sap is collected by tapping the tree, and then it is brought to a processing facility where it is heated to evaporate the water content and then cooled and crystallized to form coconut sugar. Tapping the coconut palm trees does not harm the tree and it can be harvested for many years. The process is considered sustainable and does not require large amounts of water or pesticides.
