Cultivated, harvested and cured pods under stringent quality standards through sustainable farming & agricultural practices. Pods are not split, fleshy, thick, and oily with a glossy black color. Vanilla extract is a fragrant, amber-colored liquid made by steeping vanilla beans in ethyl alcohol and water. To be considered a “pure vanilla extract,” it needs a minimum of 35 percent alcohol and at least 100 grams of vanilla beans per liter. It is considered an essential ingredient in many Western desserts, especially baked goods like cakes, cookies, brownies, and cupcakes, as well as custards, ice creams, and puddings.
Vanilla paste is also called vanilla puree. It is a blend of pure vanilla extract, sugar syrup, and vanilla bean seeds in a convenient product. The vanilla bean seeds are suspended in the sugar syrup so that you can easily add the appealing look of vanilla bean seeds without splitting open the vanilla pod. Grade-A beans (often called "gourmet vanilla beans") are visually a more beautiful bean. They are plump, pliable and full of fresh vanilla bean caviar. Their color is dark and chocolate-like, sometimes with hints of red. Their texture is soft due to their higher moisture content that is usually around 30%. They are easily sliced open to remove the caviar for vanilla bean paste, vanilla sugar or any other creation where you want to see those beautiful vanilla speckles. They are rich with vanillin, the natural compound in vanilla that creates the wonderful vanilla smell and taste. Because of their high quality and versatility of use, grade-A vanilla beans are typically more expensive.
